1: How to cook teppanyaki squid

1: Ingredients: fresh squid (about 1000g), 15g chopped red pepper, 15g chopped green pepper, 10g chopped coriander, 15g chopped onion. Seasoning: 30g garlic chili sauce, 5g sugar, 10g seafood soy sauce, 20g oyster sauce, 4g salt, 2g MSG, 1500g salad oil, 30g dry starch.

2: Method 1: Peel off the black outer layer of the whole fresh squid, pull off the head, remove the internal organs and sea cucumber sheath in the abdominal cavity, then dig out the squid's eyes with scissors and wash them clean.

3: 2. Drain the cleaned squid body and head, marinate with seafood soy sauce and 10g oyster sauce for 20 minutes, evenly coat with dry starch, fry in 60% hot oil over medium-low heat for 3 minutes until the skin is crispy, remove and drain the oil.

4: 3. Place the drained squid on the chopping board, cut the abdominal cavity from head to tail into squid rings with a distance of 1 cm, and then place them together with the head on the plate.

Leave 20 grams of oil in the pot, heat it to 70% hot, add garlic chili sauce, sugar, and 10 grams of oyster sauce, stir-fry evenly over low heat, then add chopped red pepper, chopped green pepper, chopped coriander, chopped onion, salt, and MSG to make garlic and pepper sauce, and serve while hot.

6: 5. Cook on high heat for 3 minutes. Take out the squid and place it on the iron plate. Pour the garlic and pepper sauce on it and serve.
