5: Pouring tea: First, take the teapot and circle it in reverse along the tea boat, in order to scrape off the water drops at the bottom of the teapot, commonly known as "Guan Gong patrolling the city" (because teapots are generally red, and when they are just taken out of the tea pond, they are full of steam, just like Guan Gong, majestic and majestic, patrolling the city with his troops). Pay attention to the direction when grinding the teapot. If you hold the teapot in your right hand, grind it in a counterclockwise direction when welcoming guests, and grind it in a clockwise direction when seeing off guests. If you hold the teapot in your left hand, do the opposite. Pour the tea in the teapot into the fairness cup to make the tea soup even. Another way to evenly mix the tea is to use the teapot to pour tea into several cups at the same time. Note that when pouring tea, do not fill a cup all at once; it is better to fill it to about 70% full.

1: The amount of tea to be added to different teas and different tea-brewing vessels is also different. Basically, the amount of tea to be added to the six basic types of tea, green tea, black tea, dark tea, yellow tea and white tea, is 2%~3% of the container's water capacity. For example, for a 100ml covered bowl, the amount of tea to be added is only 2~3 grams.

2: Water temperature: The water temperature should be boiling water at the beginning of the tea. Different teas require slightly different temperatures, which is very particular. Generally speaking, there are two types of tea: unfermented and fermented tea. The water temperature of fermented tea is higher than that of unfermented tea. Green tea is unfermented tea, and its water temperature is between 65℃ and 75℃; while the water temperature of black tea, dark tea, and oolong tea is boiling water. Especially in Yunnan, the water temperature is high and the boiling point is low. It must be boiled thoroughly (but not overcooked, that is, just opening) to stimulate the fragrance, rhyme, and taste of the tea.

3: The soaking time is generally about 2-3 minutes. If the soaking time is too long, the tea will be old and bitter, and may soak out the bad substances in the tea, such as agricultural residues; if the soaking time is too short, the tea will be weak and have no tea aroma; at the same time, there should be a proper ratio with the amount of tea and water temperature. If the amount of tea is high, the soaking time should be short; otherwise, the soaking time should be increased.
