Ingredients: 500 grams of Chinese cabbage, 400 grams of pig brain, 30 grams of coriander, 10 grams of cooking wine, 4 grams of salt, 2 grams of MSG, 20 grams of green onion, 5 grams of pepper, and 20 grams of vegetable oil.

2. Put the old soybean paste, scallions, ginger, peppercorns, aniseed, cinnamon, cloves, bay leaves, dried chili peppers, oyster sauce, chili oil, MSG, cooking wine, salt, white pepper, sugar, and pig brain into a pot, then steam for one hour. Turn off the heat and take out the pork. Soak it in the original soup for half an hour, take it out and let it cool. When eating, spread it with sesame oil and place it on a plate.

4. Braised Pork Brain

Ingredients: 400 grams of pig brain, 25 grams of magnolia slices, 10 grams of winter bamboo shoots, 50 grams of lard, 13 grams each of green onion, salt and cooking wine, 20 grams of soy sauce, 8 grams of ginger, 3 grams each of MSG and wet starch, and 250 grams of soup.

1. Soak the pig brain in warm water, remove the meninges, and then boil the pig brain in boiling water with salt. Remove the foam, cut into pieces, and soak in the original soup.
