If you like spicy food, you can add some chopped red pepper. Mix the minced garlic and chili with oil, add salt and MSG (or chicken powder) and mix well. Add a little more salt. Black bean sauce: mince the fermented black beans and garlic, and you can also add chopped chili, and mix with oil, salt, etc.

2: When buying fresh oysters at the market, you can ask the market staff to help you pry open the shells, or you can buy them and do it yourself at home. To do this, use a brush to carefully clean the shells, use a hammer or a hard object to flatten the edges of the shells, and then use a flat screwdriver to pry open the shells. After opening the shells of fresh oysters, sprinkle some lemon juice on them and you can eat them. They are delicious, but they must be very fresh.

3: Peel the oyster meat out of the shell, put it in a bowl, add a little white wine, salt and pepper, and refrigerate to marinate for 15 minutes.

4: Peel the garlic and chop it into minced garlic. Add the right amount of oil (the same amount as the garlic) into the wok and fry the minced garlic over low heat until it is fragrant and slightly golden. Note that you must use low heat and keep stirring with a spatula to prevent the minced garlic from sticking to the wok. Rinse the minced garlic with clean water before frying to remove the mucus on the surface of the minced garlic and prevent it from sticking to the wok, but the flavor of the garlic will also be lost.

5: Drain the fried garlic and oil, let it cool, and then add salt and chicken essence according to your taste. It can be slightly saltier than usual.

6: Put the marinated oyster meat into the cleaned oyster shells and spread the prepared minced garlic on top of the oyster meat.

7: Place the oysters in the lower oven and bake for about 20 minutes, until the oyster meat shrinks slightly. Finally, bake for 1-2 minutes on both upper and lower heats until the minced garlic is colored. If your oven does not have upper and lower heat, you can cover the oysters with a piece of tin foil to prevent them from burning.
