Material:

Squid tentacles, fried flour (available in supermarkets), or flour and eggs can also be used.

How to cook salt and pepper squid whiskers

1. Cut off the head of the squid, wash it, drain the water, add a little salt, wine and pepper and marinate for a while.

2. Take a small bowl, mix some of the fried powder with water to make a paste, and take another plate to put the dry fried powder. You can also use egg yolk, add appropriate amount of flour and water to make a paste.

3. Add appropriate amount of oil to the pot and heat it to 80%. Coat the squid tentacles evenly with batter and then sprinkle them with dry frying powder. Fry them on low heat until golden brown. Heat the oil pan to 90% hot again, put the squid tentacles just taken out into the pot and fry them briefly. This will make them more crispy. Drain the oil, serve on a plate, and sprinkle with pepper and salt.

Tips

Make sure to choose fresh squid. It can be frozen, but it must be fresh, otherwise the meat will become powdery, affecting the flavor and taste.

The egg yolk is very important. It helps to adhere to the cornstarch and should not be ignored.

The squid should be cut on the inside so that it can roll up when heated. If you cut it from the front, it will not roll up.

There is no need to leave any oil at the bottom when frying the spices at the end. The little bit of oil on the wall of the pot is enough, otherwise the finished product will be greasy.
