How to eat amaranth

1. Stir-fried amaranth

Ingredients: 500g amaranth, 2 cloves of garlic, salt, chicken essence, sugar

practice:

1. Remove the old stems of the amaranth and wash it clean. When washing it for the last time, rub the amaranth gently several times like rubbing clothes.

2. Place a pot on the stove without adding oil. Directly put the water chestnuts and crushed garlic into the pot. Roast the water chestnuts over medium heat until they are wilted, turning them over constantly.

3. Pour oil along the side of the pan and stir-fry evenly.

4. Add salt, chicken essence and a little sugar (sugar can enhance the flavor) to season.

5. Cook the amaranth over medium-low heat for another 7-8 minutes until the juice is fully seeped out and the stems are soft but not rotten.

2. Red amaranth and preserved egg soup

Ingredients: 1 handful of red amaranth, 2 preserved eggs, half a bowl of boiling water, oil, salt, and 2 cloves of garlic.

1. Remove the old stems of the amaranth and wash the mud and sand on it several times with clean water. After washing, pick it up and drain the water.

2. Chop the garlic and peel the preserved eggs and cut them into small pieces.

3. Heat the pot and pour in oil. Stir-fry the minced garlic and add the amaranth. Stir-fry until the leaves become soft, then add boiling water. Put the preserved eggs in, add salt, and boil over high heat for a few minutes.

3. Steamed Amaranth with Garlic

Ingredients: Amaranth, garlic, ginger, salt, sugar, chicken essence

practice:

1. Remove the roots of the amaranth, select and clean it, cut the garlic into large pieces, and cut the ginger into shreds for later use.

2. Add appropriate amount of seasoning and steam the amaranth over low heat.
